Winemaker Notes:
The grapes for our 2005
Dry Creek Valley Chardonnay were harvested before dawn to allow the fruit to be brought to the winery cold. After crushing and pressing, the juice was fermented in a combination of stainless steel and small oak barrels over approximately four weeks. During this time, the lees were stirred every week. Malolactic fermentation was almost fully inhibited. This chardonnay was aged for five months in 60-gallon French oak barrels followed by bottling in the spring of 2006.
Tasting Notes:
Our 2005 Chardonnay begins with notes of green apple and minerals, Flavors of apple and honeydew melon predominate, mixed with subtle accents from the small oak barrels. Firm acidity provides a fresh crisp finish.
Food Pairing Notes:
Excellent with mild cheeses, grilled chicken, most white fish, and pasta salads. Our 2005 Chardonnay will also provide an excellent addition to a chicken Caesar salad.
