Winemaker Notes:
The grapes for this
Russian River Valley wine come from the Sauvignon Blanc block on Mill Creek's estate property. The grapes were hand harvested September 1, 2005. The sugar was 25.4 degrees Brix and had a pH of 3.31. After settling, the juice was racked then inoculated with QA23 yeast, then fermented in a combination of temperature controlled, stainless steel tanks at 55 at 60 degrees and small oak barrels. The wine was bottled March 21, 2006.
Tasting Notes:
A fresh nose of grapefruit and lime with hint of honey. Flavors are classic Sauvignon Blanc fruit with lime and grapefruit and a spicy, lively finish with medium acidity.
Food Pairing Notes:
This dish pairs especially well with lighter pasta dishes, pasta salads and white fishes. Its crisp freshness is particularly enjoyable with chicken or veal piccata.
