Aroma Rich casaba melon. Lemonade. Aromas of pear, intense cumin, paprika, cilantro, and exotic herbs.
Flavor Full, lush and clean with long melony flavors and good acidity. 20% residual sugar. Syrupy but with plenty of acid to match.
Balance Somewhat sweet with great acid. Great starter wine as an alternative to Pepsi.
PRODUCTION CORRELATIONS
Oenological Stainless steel fermentation, arrested at 2 to 4% residual sugar. Sometimes artificially frozen and not labelled as icewine, but of the same ilk, and cheaper.
Viticultural Reasonably winter-tolerant.
Terroir High latitude, long summer days, moderating lake effect prevents winter kill, moderates temprature, and creates wind that dries vines. Well-drained benches 500-1,200 feet.
