Appearance grey-green straw.
Aroma Mango and peach aromas.
Flavor Rich and oily with some tannin.
Balance Generous enough to drink by itself. Rich and oily with soft acidity and assertive alcohol heat.
PRODUCTION CORRELATIONS
Oenological Gentle pressing, sometimes with hyper-oxygenation of juices to precipitate tannins prior to fermentation. Stainless steel fermentation at moderate temperature (60 F). Malo-lactic fermentation suppressed. Little or no oak.
Viticultural Moderate crop load. If mechanically harvested, must be pressed immediately to prevent tannin pick up.
Terroir Rich sandy loams, cooled by Pacific influence through Fairfield gap.
