Profile #1
|
Appearance |
Straw |
Aroma |
Spicy ginger, lemongrass, orange, and pineapple.
|
Flavor |
Racy acidity, with a delicate but firm tannin structure. Finishes with lime zest and a lively minerality.
|
Balance |
Unlike other aromatic varieties, it is not oily and lush, but makes a hollow place in its center which is filled by sweet shellfish such as crab or lobster. |
PRODUCTION CORRELATIONS |
Oenological |
Like Gallician Albarino, there is no natural sweetness, and to be at its best with shellfish, the wine is fermented to complete dryness in steel and never sees oak or malolactic. Lees may be stirred to soften the tannins. |
Viticultural |
Dense vines and low yields, certified organic. |
Terroir |
Deep sandy loam requires irrigation. Natural air conditioning courtesy of daily gales from the Pacific. |
