Pure, Straightforward Style
Appearance Straw.
Aroma Lemon curd, rose, quince. Very clean and unembellished. No oak influence. No butteriness.
Flavor Delicate, refreshing, light body, delicate, refreshing. Impression of bergemot in the mouth and a minty finish. Perfect for the "Anything But Chardonnay" Club!
Balance Moderate acidity, balanced alcohol.
PRODUCTION CORRELATIONS
Oenological Standard crush, de-stem, and press. Stainless steel fermentation at moderate temperature (55 - 60 F). No oak influence or malolactic fermentation. May have slight residual sugar.
Viticultural A naturally well-balanced vine which can be cropped at 5 - 7 tons per acre to produce a good value wine. No trouble achieving moderate ripening for this style. Generally mechanically harvested. Can have rot problems in rainy years.
Terroir Rich sandy loams, cooled by Pacific influence through Fairfield gap.
