Lead winemaker, Dennis is committed to producing small lots of the highest quality premium wines. Dennis is versatile but focused. He is a systems engineer by trade with multiple graduate degrees, an alumnus of the US. Naval Academy, Annapolis, MD, and retired from a career in Naval Aviation.
Wine making is a passion backed by practical research and experience, university level enology and viticulture education, and important hands-on work at area vineyards and wineries.
All of our winemaking staff invest their time heavily in maintaining quality winemaking skills and techniques, and in on-going education and classes, including education offered by the industry renowned University of California Davis (UC Davis).
We operate in a temperature controlled, sanitary stainless steel environment, using as appropriate, premium oak barrels for aging, all in a fully licensed, bonded, and permitted production and processing facility.
We practice traditional hands-on winemaking using carefully chosen equipment and techniques; for example -- we chose/use gentle bladder presses for processing our wine-grape must/pomace, avoiding harsher mechanical presses that risk introducing excessive bitterness/tannins extracted from the pomace (skins, seeds, and stems) into our wines.
