Winemaker Tasting Notes: The color is bright with a salmon hue. This is another classic Wölffer Rosé. The nose is abundant with aromas of peach, orange, citrus and lychee. The mouth-feel is lush yet focused with great balance of lush fruit and playful acidity. Overall the wine is vibrant and fresh with a fine zing from the CO2 captured through the cold fermentation and the gentle handling. It has a bright, fruit driven finish with mineral characters and is classically dry making it very food friendly and refreshing. Food Pairing: Serve chilled. This exciting wine’s versatility allows it to match well with almost all foods. Favorites include hors d’oeuvres such as smoked salmon, lobster, shrimp, marinated meat, ethnic cuisines and soft cheeses. At Thanksgiving it is the perfect match with Turkey and all its trimmings. Technical Notes: This wine is a blend of 48% Merlot, 39% Chardonnay, 8% Cab. Franc, and 5% Cab. Sauvignon. After one of the best growing seasons ever to bless Long Island, the harvest began on September 28th and concluded on October 5th. Specially selected lots were hand-picked with a crop level from 3 to 4 tons per acre. The Red varieties stayed on their skins between 12 to 24 hours to extract color and mouth-feel and were gently pressed. The Chardonnay grapes were pressed immediately. The juice for all 3 lots was well settled at 50˚ Fahrenheit followed by cool fermentation (62˚ Fahrenheit) to total dryness. After blending the wine aged in stainless steel.
