Winemaker Tasting Notes: Light golden color. Ripe and complex aromas of peaches mixed with vanilla, honey and classic flintiness. The mouth-feel is thick and complex yet incredibly elegant displaying ripe and lush fruit characters balanced by fine acidity, mineral and toasted walnut. The wine has a long finish with hints of fine lees, vibrant zest and hints of toasted oak. Food Pairing: Serve only slightly chilled. A pairing of this classic Burgundian style Chardonnay will go especially well with Crab cake or Lobster but also with veal, chicken or fish prepared with rich, creamy sauces that compliment each other and enhance the flavors of both. It also pairs particularly well with Gruyere cheese. Technical Notes: 78% Chardonnay, Dijon Clone #76 hand-picked on October 28th and 22% Chardonnay, Clone 3 hand-picked on November 1st. The growing season was hot and sunny with some storms before harvest and allowed for great maturity and ideal harvest numbers at the time of picking. The golden and perfectly ripened grapes were gently handled and pressed. The Juice was chilled to 50° F and well settled. Barrel fermentation in French Barrique (28% new oak) was followed by natural malolactic fermentation for 1.5 months, which was stopped at 50%. The wine stayed surlees in the barrels for a total of 7 months with very little batonage (stirring) and was than carefully racked. The bottling was done mid August of 2003 and resulted in 453 cases of 750ml bottles. The wine was bottle-aged for 3 years before release.
