Winemaker Tasting Notes: A pale, shimmery peach in color, Wölffer Verjus is a fresh, zesty, flavorful product with the focus on bright acidity and lime notes. The nose is exuberant with gooseberry, mint, and white pepper. The mouthfeel is refreshing and clean, with a fine balance between the tart acidity (hints of lime and green apples) and the fine touch of natural sugar. The finish is playful yet firm, displaying substantial quality and character. Food Pairing: This versatile product can be served chilled on its own or as a spritzer for a crisp, refreshing, non-alcoholic alternative to wine. Or it adds zip to cocktails—try it in a Margarita or a Cosmopolitan. It is also popularly used by chefs and discerning home cooks to deglaze pan juices and to replace vinegar in salad dressings as a less aggressive flavoring, allowing a smooth integration of food and wine. Technical Notes: Wölffer Verjus is made from a blend of 49% Chardonnay, 26% Merlot, and 25% Cabernet Franc grapes. Hand picked on September 10-11, 2003, the unripened grapes were immediately pressed and the juice was chilled to 32 degrees F for 24 days to avoid fermentation. During this time, the juice was stabilized and sterile filtered; it was bottled on October 5th. Production was 665 cases of 750ml and 297 cases of 375ml bottles.
