Winemaker Tasting Notes: Light golden in color. The nose has vibrant aromas of baked apple and honeycomb. The mouth-feel is fresh and crisp with lots of ripe apple notes and a wonderful balance between the residual sugar and the zesty acidity. The CO2 captured during the cold fermentation along with the flavorful apple skin characters and slight sweetness provide a great finish that seems almost endless. Food Pairing: Best served chilled, this wine is wonderfully thirst quenching when mixed with sparkling water, and a great companion to antipasti and other light fare. In the kitchen it is a fabulous condiment for sauces and reductions. It is also specially suited to accompany fruit pies and any other fruit driven desert. Technical Notes: 25% Breaburn, 15% Pink Lady, 15% Mutsu, 10% Fuji, 10% Winesap, 7.5% Idared, 7.5% Golden Delicious, 5% Gold Rush, 5% Macoun, Grown by the Halseys of White Cap Farm, the apple juice came from the above blend of apples each of which contributes a distinct character. After pressing the apples on January 5th, 2006 at White Cap Farm, the juice was brought to the winery to start cold settling for 4 days. The juice got carefully racked and inoculated with the wine yeast “Cote de Blanc” to start fermentation, which happened slowly and steadily at a maximum temperature of 62 degrees and was stopped after 15 days to preserve some of the natural sugar (11gr/l = 1.1%) by chilling the wine and by racking it of the yeast.
