Winemaker Tasting Notes:
Light golden in color with fine strings of beads indicating finesse and class. The aroma is a beautiful bouquet of fine honey, bread dough and citrus. The mouth-feel is very focused with an elegant play between fruit and acidity, showing apples, toasty yeast and walnut. The finish is seamless and long with lots of minerals, bright acidity and plenty of fruit. Overall a classic Sparkling wine that is very food friendly.

Food Pairing:
As is the case with Champagne, this sparkling wine is a natural partner to caviar, smoked salmon, and shellfish. It also pairs well with appetizers featuring a salty main ingredient such as bacon, prosciutto, or sun-dried tomatoes, and is a palate-refreshing complement to lobster bisque or other cream-based soups. Try it as well with grilled fish, various chicken and veal preparations, and mild cheeses. Surprisingly, it complements ethnic cuisine such as Japanese, Chinese, Thai, and Southwestern, cooling their hot and spicy flavors. And of course, it is the perfect toast for special occasions.

Technical Notes:
83% Chardonnay, 17% Pinot Noir The grapes were carefully hand picked from 2 special lots designated for this sparkling. The Chardonnay grapes were picked on October 10th from our oldest Block (planted in 1988) Davis Clone 3+4 and the Pinot Noir on October 11th from our 1993 Block. The grapes were handled and pressed – as whole clusters – as gently as possible. The juice was cold settled and a slow fermentation was achieved by keeping the juice at very cool temperatures in stainless steel tanks. Malolactic fermentation was strictly avoided to keep the wine’s lively acidity. The wine was blended and then aged for 5 months prior to clarification and filtration. It was bottled on the 3rd and 4th of April 2004 and went through its second fermentation (Methode Champenoise). After 20 month of aging in the dark cuvee room it was hand riddled and disgorged, with a dosage added of 9 grams per Liter (brut). Production was 335 cases. (There are another 320 cases still on triage for another year)
