Winemaker Tasting Notes:
Bright golden in color. Classic Chardonnay aromas of ripe pear, fine yeast and toastiness with hints of honey. The mouth-feel is full with fruit, bright acidity and wonderfully integrated lees and oak notes. The seemingly endless finish is vibrant and complex with mineral and creamy yeast that highlight the classic Burgundian style this wine is made in.

Food Pairing:
Serve slightly chilled. The elegant flavors and acidity, as well as the subtlety of this wine, will enhance all fish and white meat dishes.

Technical Notes:
100% Chardonnay. Following a wonderful growing season the golden and ripe grapes were hand picked in 7 inidvidual lots starting on October 17 and ending on November 11. The grapes were gently handled and pressed and the juice was chilled down to 50 degrees and well settled, followed by a traditional barrel-fermentation in 83% French Barrique and 17% in stainless steel tanks. Malo-lactic fermentation completed 80% and the wine matured surlees for a total period of 8 months with very little batonnage (stirring of the yeast.) The blending of the 7 lots was done at the end of June resulting in 2,2020 cases of the wine bottled in August of 2004.
