Wines

Appellation: Howell Mountain ~ Napa Valley
Price: $40.00

Background: Summit Lake's winemaker and owner Bob Brakesman produces a stunning Cabernet Sauvignon from a two-acre plot atop Howell Mountain (2,200 feet). Even better, the winery holds the wine for three years in mostly used oak and then in bottle for another 12 months, allowing the wine to develop nicely into release.

The Wine: Layers of complexity, highlighted by a brawny structure, lots of tar, minerality and earthiness mixed with ripe blackberry flavors.

Food Pairing: Ideally suited for grilled red meat-- rack of lamb, venison or loin.

Wine Chemistry
Ever wonder why certain pairings do or don't work so well?
A lot has to do with chemistry. For instance:
*Red wine tannins can react with phosphates in white fish to give an unattractive taste sensation
*Red wine tannins electrically combine (some might say perfectly?!?) with red meat protein molecules
*White wine acidity causes salivation which freshens the mouth when eating fatty or oily foods
*Acidity in wines is chemically neutralized by salt in foods
