Wine Recommendation:
Gypsy Canyon Vineyards
2005 Pinot Noir, Santa Rita Creek Vineyard
Winemaking Notes:
At dawn on September 30th, 2005, we hand harvested 3 1/2 tons from our estate Pinot Noir Dijon clones 115/777 and 1/4 ton Pinot Gris. The grapes were gently de-stemmed into 1/2 ton fermentation bins and allowed to cold soak for 3 days protected by a layer of co2. After cold soaking, the must was inoculated with yeast to begin fermentation. The grapes were gently pushed down by hand 3 times a day till dry. The free run was gravity racked into new French Oak and the rest gently pressed into 3 year old French Oak. Once malolactic fermentation was complete the wine was given the first addition of so2. It was then gravity racked and hand bottled without filtration on August 24th 2006.
Vineyard Notes:
Growing Pinot Noir in Santa Rita Hills is only the beginning. The micro climate at Gypsy Canyon is exceptionally cool compared to other vineyard sites in the Santa Rita Hills. This allows the berries to ripen with stable sugar levels and develop complex full bodied fruit character, a true Burgundian style Pinot Noir. Environmentally responsible, we tend the vineyard by hand, creating balance vine by vine. Our wine making is also done by hand, in small lots with no filtration, allowing honest expression of the Santa Rita Hills landscape.
Our Pinot Noir is made for individuals with a sense of discernment and with an appreciation for real hand made wine.
