Winemaking Notes:
Produced in the classic style of Champagne, this is a blend of 76% Pinot Noir and 24% Chardonnay. The fruit is pressed whole cluster, then fermented in stainless steel tanks at a not too cool temperature. The second fermentation is conducted in the bottle and the wine is aged on the yeast for a full 54 months before disgorging.
Tasting Notes:
Aromas of toast and spice are supported by notes of cherry from the Pinot Noir and apple and citrus from the Chardonnay. Rich and toasty on the palate from the extended lees ageing with a fine, delicate mousse.
