A Note About Sherry:
Oloroso (olo-roh-soh) sherries are among the most prestigious of wines and most durable to cellar for a future special occasion. Their dark amber color is produced by long aging and air exposure. Characterized by rich pecans, oak, and cream; the fruity characters are prevented by suppressing 'flor' yeast with an early fortification (addition of 190 Proof grape brandy).
The two main categories for sherry are Oloroso and Fino. Fino sherry is allowed to grow ‘Flor’ yeast, which protects it from oxidation, then is aged in a Solera barrel-aging system, fortified, then aged again. Oloroso is fortified first then aged and oxidized because it is typically not protected by Flor, this gives the sherry it’s profound nutty flavors and aromas.

is produced from 100% old vine Palomino, Mission and Pedro
Jimenez grapes grown in the
Cucamonga - Guasti area. It was then fortified with grape spirits, and aged (over 15 years) in a traditional Solera (white oak) barrel aging system.
The Library Reserve release has proudly earned several awards thanks to its inviting warm mouth feel and a rare smooth finish. Accompanied best by mixed nuts, pistachio cream cheese, buttery crackers, or perhaps pecan pie! Also a perfect complement to the traditional Spanish dish, Tapas, which includes many different fish, mussels and grilled vegetables. Will cellar 10 years or more.
