Vineyards Notes:
Not all grapes are well behaved – some go to detention! This is a blend of all our first cut vineyards. They are fermented on the skins to gain color and body and then they are pressed after 7 – 10 days.
Winemaking Notes:
Following fermentation this wine is blended from several varieties. We use the higher acid varieties because we intended to make the wine sweet. A portion of the wine is aged in stainless steel to retai fruit notes and the rest is aged in barrels to contribute the roasted coffee notes.
Tasting Notes:
This wine is made to drink young. It has soft tannins and is lower in alcohol. Notice the smoky oak and dark berry flavors.
Food Pairings:
This wine goes well with grilled foods and barbecue sauces. It can also be served with chocolate. Whatever you have, just make sure to serve your detention.
