Winemaker Tasting & Pairing Notes:
Medium-bodied, good tannin structure, cherry fruit character as well as
oak. Aromas of cassis, cherry cola, anise and barrel spice. Pair with
barbecued steak, grilled leg of lamb or mushroom risotto. This Cali-Italia
wine is one of Italy’s oldest varietals.
Winemaking Notes:
Whole berry fermented in small open fermenters. 10-12 days maceration
with 2-3 hand punchdowns per day. Aged in French and American oak for
11 months.
