Winemaker Tasting & Pairing Notes:
Full-bodied, supple tannins, long smokey finish. Aromas of cherry, toasty oak,
roses and clove. Nice cola, cherry and oak flavors. Pair with red meat pasta
sauces, stews, grilled burgers, cured meats; proscuitto and sopresatta.
Winemaking Notes:
Whole berry fermented in small open fermenters. 10-12 days maceration
with 2-3 hand punchdowns per day. Aged in French and American oak for
11 months.
