Winemaker Tasting & Pairing Notes:
Full-bodied with black cherry, plum, herbal spices and tobacco aromas.
Herbal and dried cherry flavors. Pairs well with roasted meats, rack of
lamb, and aged cheeses.
Winemaking Notes:
Whole berry fermented in small open fermenters. 10-12 days maceration
with 2-3 hand punchdowns per day. Aged in French and American oak for
11 months.
