Winemaker Tasting & Pairing Notes:
Medium-bodied, aromas of blackberries, mint, plum, cinnamon and fresh
linen. Notes of cherries, leather and tobacco with lingering oak flavors.
Pairs well with BBQ, venison, blue cheese and rich vegetarian meals. A
cross between the delicate Pinot Noir and the more robust Cinsaut.
Winemaking Notes:
Whole berry fermented in small open fermenters. 10-12 days maceration
with 2-3 hand punchdowns per day. Aged in French and American oak for
11 months.
