Winemaker Tasting & Pairing Notes:
Medium to full-bodied with ripe fruit flavors and aromas of red cherry
and strawberry. Slight sweet entry with good tannin structure. Pair with
roasted chicken, lamb, filet mignon, pâté, goat cheese, Brie, walnuts,
strawberries and cream or white chocolate.
Winemaking Notes:
Whole berry fermented in small lots. 10-12 days maceration with 2-3
hand punchdowns per day. Aged in 60% new French oak for 9 months.
